In this brewing video we’re making a pre-prohibition style lager with water collected from a natural spring on top of a mountain. We start this brew day by foraging for our water. This involves taking a hike to Black Balsam Knob, a mountain in Pisgah National Forest. Once we collect water from a natural spring on top of the mountain, we take it back to our brewing studio and make a beer using ingredients commonly found in pre-prohibition lagers, like 6 row barley and corn. The process of making this beer was super fun and it gave us a good excuse to go outdoors and hike a mountain. We encourage you to forage for your own wild ingredients, whether that be water or yeast. Pair this beer with some seafood or steak, and drink it at a cookout with friends.
